Overview
How brine block ice is made
Stainless steel molds filled with water sit in a tank of chilled brine. The refrigeration system keeps the brine well below zero, and the water freezes into solid blocks from the outside in. When the cycle ends, the molds are lifted out, dipped briefly to loosen the blocks, and dumped. Because the brine surrounds the molds, freezing is even and the blocks are clear and dense.
Sizes
The machine comes in three daily output sizes: 500, 1,000 and 2,000 kg per 24 hours, and the block weight is 5 or 10 kg. The output figures are measured at stated ambient and water temperatures; hot ambient air or warm feed water lowers output, so the machine is sized to your conditions.
Construction
The brine tank and the molds are SUS304 stainless steel, which is standard in food-related ice making. The machine is built on an integrated frame, so the compressor, condenser and tank sit together, with fewer connections to make at site. Power supply, cooling type (air or water) and refrigerant are set to your site.
Where it is used
Block ice is the preferred form for icing fish in boxes or in a hold, because it melts slowly. It also fits market ice supply and food distribution.
Not covered here
Direct-cooling block makers and large container ice plants are different machine types. If your volume is larger, we can discuss those separately.
Choosing a configuration
- Daily output and block weight
- Water source and quality
- Cooling: air or water
- Power supply and ambient temperature
Operating notes
A brine machine needs clean water and a stable power supply. Brine strength is checked on a schedule, and we send a short maintenance sheet with the machine. Good ice storage and handling matter as much as the machine itself.
Choosing 500, 1,000 or 2,000 kg per day
This brine-type block ice machine freezes water in stainless molds placed in cold brine. It makes 5 kg or 10 kg blocks and comes in three outputs, 500, 1,000 or 2,000 kg every 24 hours under test conditions. All three use the same indirect brine method with a SUS304 tank and molds.
The smaller outputs suit a fish stall, a small fishing boat dock or a bar with its own ice. The 2,000 kg model suits a seafood trader or a cold chain operator. If your demand is above this, a larger block ice plant would be the next step. This machine is not for flake or cube ice, which are made by different machines.
Output is lower in hot climates, especially with air-cooled condensers. Water supply also matters, since blocks need clean water.

Frequently asked questions
Do I need a crane to lift the molds?
Mold handling is part of the configuration. Hoisting and dumping arrangements are set for your site.
Can it run on a generator?
That depends on the generator capacity and the starting load of the compressor.
Is the stated daily output guaranteed?
Output is tested under stated conditions. Output is recalculated for your ambient and water temperatures in the quotation.
Are the blocks clear?
Blocks are opaque in the center because trapped air freezes in the middle. Clear ice needs agitation or air blowing in the mold, which can be added.
